What is this Stuff?
Back when I lived in Boston, my favorite quick meal was one I could pick up at just about any bakery counter in Boston supermarkets. It made for messy fingers, but a quick few minutes in the toaster oven to heat it up, and I had a delicious meal.
Only I have absolutely no idea what it's really called.
It had feta, with sauteed style onions and spinach on top of a flatbread. It's not pita in the conventional American sense, as it's not a pocket bread. Nor is it a phyllo, like a spanikopita.
It's a lot like a focaccia, and could even be called pita pizza. I'm 98% sure they're greek, but they're similar to Lebanese lamejunes, only a vegetarian version. I've even asked a few Greek-Americans I know who were familiar with it, but weren't sure what it was called. It's similar, but not a lahmacun, or manoushe/manaish.
I've been trying on and off for years to find it's name. I've spent hours trying different text strings to google, without any real success, other than finding some vendors that might possibly be it. On ChowHound, someone else asked the same question, but without a successful answer.
I think it was made at a regional bakery that served all the major supermarkets, even Bread and Circus and Star Market. I was able to find
a website for Joseph's pita bread, and remember buying that as well as another brand I can't recall fairly regularly. It could be Cedar's, as I certainly ate a lot of their hummos and tabouleh, but it's not on their website either. They didn't know what I was talking about at Phoenicia, although it's very close to the their cheese bread. I suppose I could try Sarah's Mediterranean Grill, but it's not on their menu. I'm hoping to hear back from my email.
I strongly suspect the bakery that made it is out of business. I seem to recall the bag they came had blue ink, and there were doric columns on it.
If worse comes to worse, I'll find a pita dough recipe and make the stuff myself. But I'd love to remember what this is actually called, and any herbs and spices in the topping.
Any ideas? Anyone? Bueller?
