Green and Envy

I had to share, it looks and smells wonderful.  Almost too good to eat. But not quite.  The ravioli are sublime.

Most, but not all of this dish comes from the farmers' market bounty. Butternut Squash Ravioli with tomato, onion stem and garlic sautéed in olive oil with parsley, and sautéed spinach (in what was left in the pan after the ravioli were gently tossed).  Only four ingredients weren't from market (salt, pepper, olive oil, shredded carrot).  The carrot wasn't such a great idea as I didn't sauté them as well, but overall, outstanding.  And I have at least two more meals worth of them.
